Turkey Sausage Patty Pancake Stack

Ingredients

  • 8 pancakes — 3- inch round, premade, warmed
  • 1.5 oz. 50121 PERDUE NAE SAUSAGE PATTIES FC
  • 4 eggs — sunny side up
  • 3 tbsp. oil
  • 4 slice cheddar cheese
  • coarse black pepper to taste
Spicy Maple Jam
  • 2 pc. bacon — minced
  • 1/4 c. onion — chopped, minced
  • 1/8 c. shallot — chopped, minced
  • 1 clove garlic — minced
  • 2 tbsp. maple syrup
  • 1 tbsp. brown sugar
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. apple cider vinegar

Instructions

  1. For jam, add bacon to a pan and cook until crispy. Remove bacon. Add onion and shallots to the bacon fat and caramelize. Add garlic, maple syrup, brown sugar, red pepper flakes and apple cider vinegar. Simmer for 5 minutes, remove from heat and let cool to room temperature. Reserve.
  2. Place turkey sausage patties on a hot, oiled griddle and brown to an internal temperature of 165 degrees.
  3. Fry 4 sunny side up eggs in a pan with oil.
  4. To assemble, add one pancake to a plate, topped with a slice of cheddar cheese, Spicy Maple Jam, 2 turkey sausage patties, a fried egg, cracked black pepper and top with another pancake.
  5. Serve with maple syrup and breakfast potatoes.
